Hutsul craft brewery "Tsypa"
The Hutsul craft brewery Tsypa was founded in 2015 in the village of Kvasy, Rakhiv district, in an extremely picturesque area of the Hutsul region. Here, they know how to brew excellent beer with a bright, rich taste, every sip of which gives you real pleasure.
The local brewers skilfully combine centuries of Carpathian brewing experience with modern technologies.
According to all the canons, craft beer is brewed from natural ingredients, with at least 50% of malt in the base. Other additives are used only to improve and complicate the taste. The brewers of the Hutsul brewery Tsypa use only the best malt, hops and yeast (mainly from Germany and the Czech Republic).
However, Hutsul beer has a unique Carpathian flavour, as it is brewed using water from a local highland spring without any special treatment. So we can safely assume that Tsypa carries the energy of the Carpathian nature.
In addition, the local craft is regularly enriched with original Hutsul accents, such as jaffa, Carpathian herbs or spruce twigs.
The fermentation process takes place in special vats that are shaped like eggs. This gave the brewery its name, as Tsypa, like a bird, is born from an egg.
The beer ripens naturally in the old cellar, without any acceleration: at least 30 days (and some varieties take several months). In general, there is very little automation in the Tsypa brewery, all the work is done by people, so this beer is truly handmade.
