Visiting the four-hundred-year-old tasting cellar of the Celtic Yard, you have the opportunity to taste elite cheeses such as Camembert, Dorblu, sheep's feta, and goat's poitou. These types of cheeses are among the most popular soft cheeses in Europe, which mature for one to three months in specially built cheese storages with appropriate temperature, humidity and air conditioning. In fact, the ripening process is the most labour- and energy-intensive, which is why such cheeses are hardly ever produced either in machine production or in private practice. Moreover, the production of these types of cheeses requires high-quality animal milk, which is obtained through a rich and saturated feed base. Unfortunately, the polonyna dog and the sun-burnt, withered stalls do not offer any prospects for high-quality cheeses. Therefore, the entire cheese industry is developing on the basis of the production of the so-called Dutch cheese with its local varieties.
